Our Pork Butt comes bone-in & is the traditional cut used for pulled pork. This large cut actually comes from the shoulder and benefits from cooking over low moist heat. Pork Butt can be used interchangeably for any recipe calling for Picnic Shoulder. Besides pulled pork, this cut works well in spicy stews like classic Posole, New Mexican Green Chili or for carnitas.
After harvest our pork is hung for 7 days before the fresh pork like our Bone-in Shoulder Roasts are cut and sealed in thick vac pac to maintain freshness even in your freezer.
Our Blue Silo Pork begins with hogs sourced direct from local producers and hand-fed to finish on a corn ration, a complex flavor you're family's sure to notice at the dinnertable. Our hogs enjoy fans and shade in the summer and extra bedding in the cold winter months in specially designed pens we can clean out to minimize disease and flies.
Each package contains one 9-12 lb Bone-in Pork Butt. You will be charged for the exact weight of the package you receive.
