If you're looking to fill the freezer & buy beef in bulk, you're looking at investing in a beef side, either a ¼, ½, or Whole Beef.

Put simply, it is a portion of the total, ready-to-use cuts that a whole beef yields. For Blue Silo customers, a ¼ Beef is ¼ of the cuts yielded from the total animal.


We love helping our neighbors fill the freezer with our beef. To keep things simple, we treat Sides more like a “big bundles.”


Here’s what I mean…


When you purchase a Side from us, we will tell you the quantity of each cut you’ll receive, the number of packages. We also know approximately how many total pounds you’ll receive. 


For example, a ¼ Beef will deliver between 90-100 total pounds of beef. A ½ Beef will yield between 190-200 total pounds. A stand-alone deep freeze is recommended for either option, to provide plenty of space and maintain a constant, sub-zero temperature, essential for preserving quality.


Here’s the cut list for each Side:


¼ Beef - 90-100 total pounds

6 - T-Bones & Porterhouse Steaks (1.25” Thick)

OR 2 Filets & 6 Strip Steaks

6 - Ribeyes (1.5” Thick)

6 - Sirloin Steaks

2 - Short Ribs

1 - Skirt Steak

1 - Half Brisket

4 - Total Roasts (3#/ea)

5 - Stew Meat (1 lb pkgs)

2 - Raw dog bones/marrow bones

3 - Meaty Soup Bones

40 - Ground beef (1 lb pkgs)


*Option to put ground beef into ¼ lb. patties

*Option to take organ meat (Liver, Heart, Tongue & Tail)


½ Beef - 190-200 total pounds

10 - T-Bones & Porterhouse Steaks (1.25” Thick) 

OR 4 Filets & 10 Strip Steaks

10 - Ribeyes (1.5” Thick)

10 - Sirloin Steaks

3 - Packages Short Ribs

2 - Skirt Steaks

1 - Flank Steak

1 - Full Brisket

10 - Total Roasts (3 lb/ea)

1 - Tri Tip

10 - Stew Meat (1 lb pkgs) 

6 - Meaty Soup Bones

4 - Raw dog bones/marrow bones

85 - Ground Beef (1 lb pkg)


*Option to put ground beef into ¼ lb. patties or pre-season with chorizo or mild Italian sausage.

*Option to take organ meat (Liver, Heart, Tongue & Tail)

*Options for custom steak thickness, roast size, and ground beef package size.

Maybe that seems like too much for you? We also offer a ⅛ Beef that comes in at 50 pounds and can easily fit into a home freezer.
