Cut at 1" thick, our Beef Shanks are taken from the foreleg or hindleg of the animal and feature a large cross-section of marrow bone. By nature the meat is leaner with extra connective tissue, so braising at a low heat with a long cook time works best for this cut. Osso Bucco, braised beef shanks, is an Italian comfort food classic that sounds fancy but is simple to make. Because of the large marrow bone, Beef Shanks could be used as a meat-on soup bone for homemade bone broth, too.
Our grass-fed beef is raised on pasture & finished for flavor with a limited corn diet, sourced within a 100 mi radius of our farm. Our beef is aged for 14 days before being hand cut, vac packed and flash frozen to lock in freshness.
Each package contains 1-2 Bone-In Beef Shank sections. You will be charged for the exact weight of the package you receive.
